Profile: Dragon's Tongue Beans



Family name:  Leguminosae (legumes)
Scientific name:  Phaseolus vulgaris

These beautiful, unusual beans grow on low bushes and are aptly named with their bright purple streaks.  When harvested young, Dragon's Tongue beans are usually stringless and tender.  However, they are delicious even when harvested a little bigger.  

How to store:  Store in a plastic bag in the refrigerator for up to one week.

How to prepare:  You can prepare these the same way you would green beans.  You can steam, boil, or saute them.  When cooked, the purple streaks disappear, and the beans will turn green.
